Lager At Its Most Nuanced
Side-pull faucets are becoming increasingly common at taprooms and beer bars across the Bay Area.

If you frequent the Bay Area’s leading brewery taprooms and beer bars, you have likely noticed an unusual faucet with a long horizontal handle that pulls toward the bartender.

These are side-pull faucets, most famously made by the Czech manufacturer LUKR. They are a defining feature of beer culture in the Czech Republic, the most beer-obsessed nation on earth, where people drink nearly twice as much beer per capita as any other country.

They may look like a novelty.

In reality, they unlock one of the most refined and nuanced ways to experience beer on tap.


Think of It Like Coffee

One of the easiest ways to understand Czech beer presentation is to think about espresso drinks.

A latte, cappuccino, and flat white are made from the same ingredients: espresso and milk. What makes them different is the ratio of liquid to foam, which dramatically changes flavor, aroma, and texture.

Believe it or not, beer can work in much the same way. Provided we have the proper tool.

In a Czech pub, a drinker might order their beer not just by style, but also by how it is poured, selecting the balance of wet, sweeter foam to crisp, bitter lager they prefer. Just like a skilled barista, a talented tapster becomes part of the craft.

And just like a cappuccino, the foam goes in first.

That detail surprises many American drinkers. It can also surprise beer tenders who have been trained that the faucet must never touch the glass or be submerged in the beer it is dispensing. Side-pull faucets, which require a diligent cleaning regimen, are an exception to this rule.


Why These Faucets Are Special

A typical American draft faucet works like an on/off switch. It is either fully open or fully closed. Anything in between causes the beer to break out into loose foam and wasted beer.

Side-pull faucets function more like a dimmer switch. Open the handle slightly, (10 degrees) and you get dense, creamy foam. Pull it fully open (90 degrees), and you get pure beer with no head. The faucet's elongated gooseneck allows the lager to be poured beneath a pillow of dense, meringue-like foam, driving the foam cap up past the rim of the glass and creating a texture that remains lush until the final sip.


Beer Service as The Final Step of Brewing

There’s an old saying among beer people: The brewer’s job isn’t finished until the customer’s glass is empty.

A great Czech lager experience is not only about how the beer is brewed, but it’s also about how it’s poured.

Czech pouring traditions embody that idea better than almost anything else in beer culture. Side-pull faucets, slow pours, hand pumps, gravity casks—even the famous Guinness faucet—all remind us that presentation is part of the craft.


The Classic Czech Presentations

The foundational Czech pour. A Hladinka delivers roughly two-thirds beer and one-third foam, creating the classic balance of sweet, creamy foam and crisp, bitter lager. The foam goes in first, and the beer is poured beneath it, pushing the head up past the rim of the glass.

For many drinkers, their first taste of a Pilsen-inspired brew poured in this fashion as a revelation: it’s the moment when a familiar pleasure suddenly becomes richer and more satisfying.

A Šnyt (pronounced “shnit”) pour should be about one-third beer and two-thirds foam, with space intentionally left at the top of the mug. Some say the Šnyt pour is the ideal quick portion for someone stopping in on a break from work, or someone expected home who couldn’t resist a quick beer on the way.

A glass of pure sweet foam. Recently, some local spots have taken to offering “milk tubes,” a version of Mlíko poured into a small-volume, tall cylindrical glass. These are designed to be consumed in one gulp as a celebratory toast or dessert beer.


More Exotic Czech Pours

Some Czech pours are still rare in the U.S., but you may start seeing them as side-pull faucets become more common, and American tapsters become more adept:

Nadvakrát – A two-step Hladinka with a pause between pours that softens carbonation, affecting the beer’s mouthfeel.

Čochtan – The opposite of Mlíko: no foam at all, just sparkling lager, typically with firm bitterness.

Řezané – One of the most beautifully prepared draft beers you will ever see. The Řezané is a layered combination of pale and dark lager in one glass. The presentation is akin to the classic “half & half” prepared with Guinness Stout and Bass Pale Ale.
